Ingredients
- 200g Rice Noodles (Soaked)
- 100g Shrimp or Tofu
- 2 Eggs
- Tamarind Paste, Fish Sauce, Palm Sugar
- Bean Sprouts, Garlic Chives
- Peanuts and Lime (for garnish)
Instructions
- Prepare Sauce: Mix tamarind, fish sauce, and palm sugar in a bowl.
- Stir-Fry: Heat oil, cook shrimp/tofu, then push to the side and scramble eggs.
- Add Noodles: Add soaked noodles and the prepared sauce. Toss until noodles are soft.
- Final Touch: Add bean sprouts and garlic chives. Cook for 1 more minute.
- Serve: Top with crushed peanuts and a squeeze of fresh lime.
