👨‍🍳 Tamarind Secret

Always use fresh tamarind paste instead of vinegar for that complex, authentic sour-sweet flavor profile. Don't overcook the noodles!

Ingredients

  • 200g Rice Noodles (Soaked)
  • 100g Shrimp or Tofu
  • 2 Eggs
  • Tamarind Paste, Fish Sauce, Palm Sugar
  • Bean Sprouts, Garlic Chives
  • Peanuts and Lime (for garnish)

Instructions

  1. Prepare Sauce: Mix tamarind, fish sauce, and palm sugar in a bowl.
  2. Stir-Fry: Heat oil, cook shrimp/tofu, then push to the side and scramble eggs.
  3. Add Noodles: Add soaked noodles and the prepared sauce. Toss until noodles are soft.
  4. Final Touch: Add bean sprouts and garlic chives. Cook for 1 more minute.
  5. Serve: Top with crushed peanuts and a squeeze of fresh lime.
