🧆 Chickpea Tip

Never use canned chickpeas for falafel! Always use dried chickpeas that have been soaked overnight. Canned chickpeas contain too much moisture and will make the falafel mushy.

Ingredients

  • 2 cups Dried Chickpeas (Soaked 24 hrs)
  • 1 bunch Fresh Parsley, 1 bunch Fresh Cilantro
  • 4 Garlic cloves, 1 Onion
  • Spices: Cumin, Coriander, Salt, Pepper
  • 1 tsp Baking Soda
  • Oil for frying, Hummus, Tahini sauce, Pita bread

Instructions

  1. Process: Drain and rinse soaked chickpeas. Pulse in a food processor with onion, garlic, herbs, and spices until grainy (not a paste!).
  2. Chill: Stir in baking soda and chill the mixture in the fridge for 30 minutes.
  3. Shape: Form small balls or patties with your hands or a scoop.
  4. Fry: Deep fry in hot oil until deeply browned and crispy on the outside (approx. 3-4 mins).
  5. Serve: Arrange on a platter with hummus, pita bread, salad, and a drizzle of tahini.
