Simmer the meatballs directly in the home-made tomato sauce! They stay much more tender this way and soak up all the sauce flavor. Also, cook your spaghetti 1 minute less than package directions and finish it IN the sauce pot.

Ingredients

  • 1 lb Ground beef/pork mix
  • 1 lb Spaghetti (high quality)
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Milk
  • 1 Egg
  • 4 cups Marinara sauce
  • Fresh parsley and 2 cloves garlic

Preparation Steps

  1. The Mix: Combine the meat, breadcrumbs, parmesan, milk, egg, garlic, and parsley. Do not overmix (it makes meatballs tough!).
  2. Forming: Gently form the mixture into 1.5-inch balls (about the size of a golf ball).
  3. Searing: Brown the meatballs in a pan with a little olive oil. They don't need to be cooked through yet.
  4. Sauce Simmer: Pour in the marinara sauce. Simmer on low heat with the meatballs for 30 minutes.
  5. Pasta: Boil the spaghetti in salted water. Drain and toss it directly into the sauce pot for 1 minute to marry flavors. Serve with extra parmesan.
