Spaghetti & Meatballs

Simmer the meatballs directly in the home-made tomato sauce! They stay much more tender this way and soak up all the sauce flavor. Also, cook your spaghetti 1 minute less than package directions and finish it IN the sauce pot.
Ingredients
- 1 lb Ground beef/pork mix
- 1 lb Spaghetti (high quality)
- 1 cup Breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 1/4 cup Milk
- 1 Egg
- 4 cups Marinara sauce
- Fresh parsley and 2 cloves garlic
Preparation Steps
- The Mix: Combine the meat, breadcrumbs, parmesan, milk, egg, garlic, and parsley. Do not overmix (it makes meatballs tough!).
- Forming: Gently form the mixture into 1.5-inch balls (about the size of a golf ball).
- Searing: Brown the meatballs in a pan with a little olive oil. They don't need to be cooked through yet.
- Sauce Simmer: Pour in the marinara sauce. Simmer on low heat with the meatballs for 30 minutes.
- Pasta: Boil the spaghetti in salted water. Drain and toss it directly into the sauce pot for 1 minute to marry flavors. Serve with extra parmesan.
