Caesar Salad
🥗 Dressing Secret

Always use real anchovies and high-quality extra virgin olive oil for the dressing. If you're hesitant about the anchovies, don't be—they provide the essential 'umami' flavor without tasting fishy!

Ingredients

  • 2 Heads of Romaine Lettuce (Fresh/Crisp)
  • 2 Grilled Chicken Breasts (Sliced)
  • 1 cup Croutons (Toasted with Garlic/Olive Oil)
  • 1/2 cup Parmesan Cheese (Shaved or Grated)
  • Dressing: Egg Yolk, Anchovies, Garlic, Dijon Mustard, Lemon juice, Olive oil, Worcestershire sauce
  • Salt and freshly cracked Black Pepper

Instructions

  1. Prepare Dressing: Mash anchovies and garlic into a paste. Whisk in egg yolk, mustard, and lemon juice. Slowly drizzle in olive oil while whisking until emulsified. Add Worcestershire sauce.
  2. Toast Croutons: Sauté bread cubes in butter and garlic until golden and crunchy.
  3. Prep Lettuce: Wash and dry romaine lettuce thoroughly. Tear or chop into large pieces.
  4. Toss Salad: Large bowl: combine lettuce, croutons, and dressing. Toss until evenly coated.
  5. Assemble: Top with sliced grilled chicken and a generous amount of parmesan cheese. Serve immediately.
